I personally have never seen lobsters in this way, but I have some ideas.

They are a good start is always a salad. For dessert, try this:
The Gram cracker crust (in a glass dish)
1 (8 oz) package cream cheese at room temperature
1 (8 oz) container Cool Whip
3 / 4 cup powdered sugar
